Blueberry Oat Scones

Recently I have reconnected with my Tech roommates, Melanie Ann and Olive (who is now called Sunny, but I forget Sunny because I know her as Olive- you understand, don’t you?)  Olive was gracious to invite us to her ranch. Fresh air, million dollar views, and newborn kids (baby goats–Ever-Lovin’ said I needed to make this clear), made me bawl-eyed.  We had such a good time talking and laughing.

You know, you have to get up early on a ranch.  I think Olive had already done a day’s work by the time I woke up.  Then for breakfast she made the most heavenly blueberry scones.   I tried not to be a pig and eat more than my share, but I did manage to get the recipe so I could make them.  They are actually a little healthy (blueberries, oatmeal, and not much sugar)- Olive is into healthy.  I need to learn from her, so I make these as often as I can.  I changed the recipe a little, more blueberries and zest.  This is so good.

Here is what you need:  Flour, sugar, oats, baking powder, salt, nutmeg, butter, orange juice, orange zest, 1 egg, and blueberries.

Easy, easy!  I make them in the food processor.  (La Machine is working well today. –Must have heard I was shopping for a new food processor.)

Throw in the flour, oats, sugar, baking powder, and salt into the food processor.  Blend together.

Using the micro-plane grater grate about 1/3 of a whole nutmeg into the flour mixture and then pulse to mix.  If you don’t have a micro-plane, do put it on your must have list.  This tool has made my life easier.  Love it!

Next put the butter into the food processor (I cut the stick of butter into fourths) and process until the mixture is crumbly.

Mix together orange juice, egg, and orange zest (used the micro-plane grater again.  HATED zesting before I got this.).

Pour into the flour mixture and process until the dough just comes together

Flour your hands and place dough on a lightly floured surface.  It will be sticky.  Kneed about 10 times.  Gently add fresh blueberries.

Place dough on a Splat lined cookie sheet (you can use parchment paper, or spray the pan)

Pat out into an 8 inch round

Cut round into 10 wedges.  Do not separate.

Brush round with melted butter, and sprinkle with sugar.  I have this vanilla sugar that is so good.

Place in the oven, and in 20-25 minutes you will have delicious scones.  The top is crunchy and the insides tender.  Yum!

Blueberry Oat Scones

These can be made in your food processor.

Ingredients

  • 1 1/2 cups flour
  • 3/4 cup oats Regular or Quick will work
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/3 nutmeg whole grated
  • 1/2 cup butter
  • 1 egg
  • 1/2 cup orange juice
  • 1 orange zest
  • 3/4 cup blueberries
  • 1 tablespoon butter melted
  • 2 tablespoons sugar I like to use this Vanilla Sugar. BB gave it to me for Christmas. Yum!

Instructions

  1. Preheat oven to 375 degrees
  2. Line cookie sheet with a Splat mat or you can use parchment paper or spray the cookie sheet with baking spray
  3. In the food processor, combine the flour, oats, sugar, baking powder, salt, and nutmeg
  4. Mix well
  5. Cut in the butter until mixture is crumbly – it is easy to cut in the butter in a food processor
  6. In a small bowl beat egg and add in orange juice and orange zest
  7. Add the egg mixture to the flour mixture and combine just enough to blend
  8. Mix in blueberries
  9. Flour your hands and kneed the dough on a lightly floured board.
  10. Kneed about 10 times into a small ball
  11. Place the dough on the cookie sheet
  12. Press into an eight-inch circle
  13. Cut into 10 wedges - Do not separate,
  14. Brush the top of the dough with melted butter and sprinkle with sugar
  15. Bake 20-25 minutes or until golden brown
