Five Cup Salad

Tuesday morning I was with some friends, and of course, the topic of what we were going to have for our Thanksgiving meal was discussed.   Shelly mentioned that she was looking forward to a fruit salad her relative always brought to their family gathering.  She related that the salad had pineapple, little oranges, coconut, and marshmallows – and she isn’t even a marshmallow fan, – but she does love this salad.  I kid you not – her mouth was salivating as she talked about how she couldn’t wait to eat this “yummy”  (Shelly’s word) fruit salad.

I knew exactly what salad she was talking about.  This was one of my mother’s favorite recipes.  We often had it on our holiday tables, and when mother got older, this was her go to recipe to take to every pot luck luncheon.  She kept the ingredients on hand, and this is what she took every time.

I guess you would call this another vintage recipe, although I am not sure combining five ingredients together constitutes a recipe.  Shelly loves it, Mother loved it, and I love it.  That makes it worthy of being shared.

As the name suggest, you use one cup of each of the five ingredients to make this salad.

Mandarin oranges, pineapple tidbits, miniature marshmallows, coconut, and sour cream.  That is it.  No the bananas in the picture do NOT go in this salad.  Sorry to say, they are just counter clutter.

On the day before Thanksgiving, Kroger did not have a small can of pineapple tidbits, so I bought the pineapple chunks.

Then I cut each chunk into fourths to make my own version of pineapple tidbits.  Worked well!

Be sure the pineapple and the Mandarin oranges are well drained.

Combine the pineapple tidbits, Mandarin oranges, coconut, and miniature marshmallow.

Eye-ball one cup of sour cream – 2 cups in a pint, so half a pint would be one cup.  There is no need to dirty-up a measuring cup for this.

Stir in the sour cream.  That is all there is to this goodness.

Put the salad in a pretty crystal bowl, chill, and serve.  Just like Shelly, your relatives will anticipate your holiday visits if you bring this beyond easy and delicious salad.

Mix together five ingredients to make a delicious fruit salad. Could not be easier.

  1. Drain pineapple tidbits and Mandarin oranges. If you can not find the tidbits, slice pineapple chunks into fourths.
  2. Mix together pineapple tidbits, Mandarin oranges, coconut, and marshmallows.
  3. Stir in sour cream.
  4. Chill for at least two hours, and serve. The salad can be chilled overnight.
