Sesame Asparagus Roll-Ups

Sesame Asparagus Roll-ups are so good.  I like them.  I love them.  They are so good that I was determined to make them for Stephanie’s shower.

It took three trips to as many grocery stores to be able to find asparagus to my liking.  At one store, the asparagus was too large (I almost wrote fat, but there is nothing fat about asparagus.)  At the next store, the asparagus was wimpy.  Wimpy asparagus will NOT work.

Then I gave up and made White Pimento Cheese Sandwiches.

But I still wanted to make the Sesame Asparagus Roll-Ups.  Yes, I thought they would be a crowd pleaser.  But I must be honest.  I wanted to blog about them.  I wanted to share the recipe with you, and have the recipe forever on the World Wide Web.  (I know.  It can still disappear, so I do keep a hard copy.)

Finally, Albertson’s had asparagus that was just right – pencil thin and crisp.  Yes!

These Sesame Asparagus Roll-Ups are super E-A-S-Y, but some assembly is required.  You only need 6 ingredients.

White Bread – yes,  plain ol’ white bread.  There are 22 slices of bread (You do not use the heels.)

Blue Cheese and Cream Cheese are mixed for the filling.  Yummy! (I realize I already said that once, but…. blue cheese and cream cheese mixed together – yummy!)

Beautiful crisp Asparagus -Wash and dry the asparagus.  Then snap the ends off so you use the tender tips.  (One bunch had more than 44 stalks of asparagus.)

Luscious creamy butter that you melt adds more richness.

And finally, Sesame Seeds that are responsible for the touch of crunch on the roll-ups.

Trim the crust from the bread slices.  Roll the bread thin and flat, and cut in half.

Mix together the blue cheese and the cream cheese – yummy!

Spread the blue cheese mixture on the bread.  Place asparagus spear on one end of the bread.

Roll that little blanket of bread and blue cheese around the asparagus.  Press seam down.  How easy is that?

Now add more goodness – Dip that little rolled-up asparagus in the melted butter.  Place the rolls seam side down on a lined baking sheet.  I used a silicone mat, but parchment paper would also work.

Sprinkle sesame seeds over the rolls.

Bake in a preheated 375F oven for 15 minutes or until golden brown.  Your home will also smell fantastic.

Be still my heart!  Sesame Asparagus Roll-ups are delicious.  At the end of the shower, the platter was bare.

Note:  The original recipe used a whole piece of bread for each roll-up.  That would be the perfect size roll on a plate full of salads.  Half pieces of bread work for appetizers.
