Rooster Brunch

What to fix for a brunch?  There seems to be a bazillion choices, but I am here to tell you – planning a party is one of my greatest pleasures.  I love looking through cookbooks and searching the internet for recipes and ideas.  This time the choices were pretty easy.  I had something I had been wanting to make, and the brunch was the perfect excuse.

Rooster Brunch Menu

Orange Juice

Zucchini and Sausage Frittata

Perini Ranch Hominy Casserole (Recipe to come in another post.)

Fresh Fruit

Croissants with Jam and Butter

The Pioneer Woman’s Cinnamon Rolls

That was the menu.  It was easy in that nearly everything could be prepared in advance.DSC_5160

I had recently seen the Zucchini and Sausage Frittata recipe online (Real Simple), and decided to give it a try.  I did make a trial test before the party and thought it something a little different.  On the day of the party, I overcooked it a bit, but otherwise it was good.

The Perini Ranch Green Chili Hominy Casserole was on my “want to make” list.  We first ate it at Perini Ranch in Buffalo Gap, Texas, and then friend Betty made it for the July 4th celebration.  I love this casserole, and the brunch was my chance to make it.  So many of the ladies wanted the recipe, and I will share it soon.  Perini Ranch Green Chili Hominy is a good substitute for grits.

Homemade cinnamon rolls always seem to be a hit at a brunch.  The dough is made in advance (up to 3 days) and stored in the refrigerator.  When you are ready to serve the rolls, just roll out the dough and bake.  This recipe makes a lot of cinnamon rolls, so I decided to make small pans of the rolls as party favors.

It was a pleasure being with friends I have known for a long time and meeting new friends at the Builders and Boomers Brunch.  These ladies are so much fun.  They laugh and tell the best stories.  Loving and active are two words that come to mind when I think of the Builders and Boomers.  The ladies began telling how they came to be members of First Baptist Church Richardson.  (Since these ladies are from several different Bible Fellowship classes, they do not all know each other well.)  Several mentioned being invited by special friends.  Another told how she knew it was the right time for her to relocate near her daughter.  It was so touching.  When she walked into our church, she just knew this was the place God wanted her to be.  It was so good to hear her story.  Others of us have been members for many many years.  All present shared how much they love our church because they enjoy Pastor Ellis’ preaching, and the people are so friendly.  After hearing these sweet ladies talk, I rejoiced and thanked God for the blessing of getting to know these ladies better.  I do hope they will come again.

Blessings to you and yours,

I promise I will share the hominy casserole recipe soon.
