Yummy Butter Cake

This recipe for Yummy Butter Cake has been around a LONG time, and Paula Deen has certainly put it on the map with her bazillion versions of it. I have also seen it titled Neiman Marcus Cake or Cheesecake Bars.

Forever in my memory is the first time I ate Yummy Butter Cake.  It was back in the early Wallace Elementary days when Ann McNutt sent Linda Hart and me each an entire pan of this goodness  Oh, my!  We  thought we had died and gone to the great beyond. I can still see the golden crust topped with cream cheese, pecans and powdered sugar.  I think I can even smell the vanilla goodness.

The favorite of the boys around our house is this plain version. Nathan wants me to make it for every family gathering, and most of the time I consent because it is so easy to make, and it is a crowd pleaser.  (Ben is campaigning for us to move on to chocolate pie.  Note to self:  Post Chocolate Pie recipe soon.)  I’m warning you, the best part of the Yummy Butter Cake is the crusty edges, and everyone will want an edge piece.  Ben even gave me a pan where every piece has a crusty edge.  How smart is that?

People still ask me for this recipe, so I decided to share it with you today. The fresh blackberries were a nice touch and made this rich dessert only slightly healthier.

Be creative with this recipe.  Use any flavor cake mix you like – lemon, pineapple, chocolate, etc…  To make Ann’s version add 1 cup of pecans to the cream cheese layer and then dust with powdered sugar.  So good!

Yummy Butter Cake

A sweet cream cheese dessert that is easy and a crowd pleaser.

Ingredients

  1. Pre-heat oven to 350 degrees.
  2. Mix together cake mix, melted butter, 1 teaspoon vanilla, and 1 egg.
  3. Press cake mixture into a 9X13 inch pan.
  4. In your food processor or with a mixer, mix together cream cheese, powdered sugar, 1 teaspoon vanilla, and 2 eggs.
  5. Spread cream cheese mixture over cake mixture.
  6. Bake in a 350 degree pre-heated oven for 35-45 minutes. Top should be golden brown.
  7. Variations: Use any flavor of cake mix you like. Add pecans to the crust or the cream cheese filling. Add coconut for a different taste. Serve with fresh berries for a nice presentation.
