Special Sweet Potatoes

I’m not 100% sure where this recipe came from, but I think Julia Harmon gave it to us to use at a Mission’s Banquet back in the 80’s.  What I do know is that it quickly became a favorite in our family.  Mother wanted to serve it every Thanksgiving and Christmas.  Ever-Lovin’ loves sweet potatoes, and this recipe pleases him – so it pleases me.  Don’t get me wrong, this recipe is my favorite sweet potato recipe.  Another person crazy for these sweet potatoes is BB, so naturally I made them for her birthday luncheon.  Believe me – they are easy to make and delicious.  Here is an added bonus, your house will smell divine.

I do think the original recipe called for 1 cup of sugar, but 1/2 cup is sweet enough for me.  Also, I have been known to use a little more sweet potatoes than the recipe calls for.  I use my trusty food processor to grate the pealed raw sweet potatoes or yams, and if there is a little more than 2 cups, I just add them.  What am I suppose to do with left-over grated sweet potatoes?  It pains me to throw precious sweet potatoes away.  I am here to tell you – it really doesn’t matter.

I think I doubled the recipe for the party.

Grated raw sweet potatoes are the basic ingredient for this delicious casserole. It is easy and always a crowd pleaser.

  1. Grease a 9X13 casserole. Preheat oven to 350 degrees.
  2. Beat together until light the eggs, sugar and salt.
  3. Add evaporated milk, melted butter, cinnamon, and nutmeg. Mix well.
  4. Stir in grated sweet potatoes
  5. Pour into the greased casserole dish and bake in the preheated 350 degree oven for 45-50 minutes.
