Sweet Potato Casserole AKA- “Special Sweet Potatoes”

You might need this for your Thanksgiving and Christmas meals, so I had better post it now – ASAP.

Recently I came across the term “vintage recipe”.  Love that term – “vintage recipe”.  I think most of my recipes are “vintage”, and worthy of being collected – maybe that is stretching it a bit, but you get the idea.

Back in the day (1970’s) when we were cooking for Baptist Women, someone shared this recipe with us, and it has been a favorite in our family ever since.  Just last week Charlotte told me that these are the only sweet potatoes she likes.  The grated sweet potatoes in a spiced custard filling is beyond delicious.  I like it much better than overly sweet and syrupy sweet potatoes.  And, it is so easy to make.

These are the ingredients:  One sweet potato (you will NOT need three – ONE large sweet potato will do.), sugar, eggs, evaporated milk, butter, nutmeg, cinnamon, vanilla, and a little salt (not shown).  That is it.

Peel and grate your raw sweet potatoes.  The recipe calls for two cups grated sweet potatoes, but I used one large sweet potato which measured about three cups, and it worked fine.

Beat together eggs and sugar with a pinch of salt.

Then add melted butter, milk, vanilla, and spices to the egg mixture.

Pour egg mixture over the grated sweet potatoes, and put the Special Sweet Potatoes into your oven.

That is it!  You bake it and serve it, and eat it.  You will be so happy.

Special Sweet Potatoes

Easy and so delicious sweet potato casserole. Great for you holiday meals.

  1. Pre-heat oven to 350 degrees. Butter an 8 X 8 (or 9X9) inch square baking dish.
  2. Peel and grate the sweet potato. Place in baking dish.
  3. Combine sugar, salt, and eggs. Beat well.
  4. Add evaporated milk, melted butter, vanilla extract, cinnamon and nutmeg. Mix well.
  5. Pour ego mixture over grated sweet potatoes. Make sure egg mixture covers the sweet potatoes.
  6. Place in a pre-heated 350 degree oven and bake for 40-45 minutes.
  7. Enjoy!
