ADK Meeting – Meal

The Alpha Delta Kappa (ADK) meeting was at my house.  I have written before about what an honor it is to be associated with these talented women educators.  These women love children and have dedicated their lives to educating children.  This was a simple gathering with easy make-ahead comfort food recipes.

The cold front was to blow into town, and I thought maybe some warm comfort food like stew would be good.  ( Picture is before vegetables were added.)  Then I saw Pioneer Woman’s show, and she served stew over grits.(No picture of our grits, but they were good if I must say so myself.)  Think instead of shrimp and grits, you have beef stew and grits.  Sounded good to me.  That was the beginning of the menu for the meeting.

Here was our menu:  It was simple and delicious

Artichoke dip and pita chips

Fresh vegetables with dip – tomatoes, carrots, and broccoli

Fresh fruit – strawberries and pineapple

The two wonderful co-hostesses for the meeting were Karen and Phyllis.

Karen brought a wonderful artichoke dip with pita chips.  Yummy!

Phyllis brought fresh veggies with dip – so pretty and delicious.

And she brought fresh strawberries and pineapple in the prettiest crystal bowls.  The ladies loved the fresh foods.

The broccoli salad was made with broccoli slaw mix.  It was easy peasy.

To be honest, the guest did not think of putting the stew over the grits, and they ate them separately.  It worked fine.

The lemon bars were so delicious.  They were tart (to my liking) and sweet at the same time.  I adapted a recipe from my mother’s cookbook A+ in Cooking.  We topped them with a blackberry just to make them look pretty.

At this meeting, we also began our Spring Fling fund raiser.  In my yard, the daffodils are beginning to bloom and hinting that spring is coming.

When I found these pretty pots of daffodils at the store, I thought they would be perfect for centerpieces (Now we can plant the daffodils in the yard.)

After the meal, we decorated the ball caps for children with cancer.

It was a good night.  Good friends, good food, and a good time doing for others.
