Uncle Raymon’s Coconut Pie

I thought I had lost it.   It being – Uncle Raymon’s Coconut Pie recipe.

Uncle Raymon was an interesting individual.  He was married to my mother’s sister, Aunt Lois. (Yes, the Aunt Lois that is 101 years young.)   He was a Junior High School principal, a shoe salesman, and an usher at the First Methodist Church of Lubbock, Texas.  He was always a gentleman.  I remember Uncle Raymon as being a great storytelle.  He entertained us with the jokes he heard at educational conferences.  (I thought it grand that I was allowed to sit quietly and hear the adult conversations.)  I guess you could also say that Uncle Raymon had domestic skills.  He could iron clothes as well or better than anyone, and he loved to cook.   In my mind, I remember everyone raving about Uncle Raymon’s Coconut Pie.

How could I have lost the recipe?

I spent an entire day looking through all my recipe boxes.  It was not to be found.  It wasn’t in Mother’s cookbook A+ in Cooking.  I could not believe I had lost it.  I even asked his daughter (my cousin) Alene if she had the recipe.  Can you believe this? – She didn’t even remember him making a coconut pie.  How could that be?  Everyone raved about this pie (according to my memory).

I am here to tell you.  There are Gremlins in this house because one day the lost recipe reappeared. – Out of the blue. –  In plain sight no less!  It was in the flip file (Where I keep “favorite” recipes.)  I thought I had looked through that file.  Well, I guess the important thing is that the lost has been found, and I do rejoice.

Having the recipe reappear had to be a sign.  I made plans to make Uncle Raymon’s coconut pie.  Do not worry.  I will be so happy to share this recipe with you – Just spreading the love if you understand what I mean.

The recipe is so simple to make.  You mix it by hand.  It is a coconut custard pie that goes perfectly with a cup of coffee or tea.  We had it for dessert, and Ever-Lovin’ gave it two thumbs up and declared it blog worthy.  His comment was that he liked that this pie was not so sweet.  I agree.

You begin with an unbaked pie crust.  (If you want to pre-bake the crust for a few minutes, it would be a good thing.  I didn’t pre-bake the crust, and it was fine.)

Pour 1/2 cup of milk over 1 1/2 cup coconut and let it soak while you mix the other ingredients.  I used unsweetened coconut.  (If you want a sweeter pie, you can use sweetened coconut.)

Beat three eggs.   (I always use extra-large eggs.)  When the eggs are well beaten, beat in 1 cup of sugar.  Beat well.

Stir in a teaspoon of vanilla extract.

Stir 1/2 stick of melted butter into the coconut/milk mixture.  (I was not sure where to add the butter.  You could add it to the egg mixture and be just fine.)  Then pour in the egg mixture and stir until well combined.

Pour the filling into the prepared pie crust and bake it in a pre-heated 350F oven for 30 to 40 minutes.  Your home will smell divine.  You will imagine yourself being honored as the next Food Network Star (Not really.  But just having the aroma of this goodness permeate your home will make you proud.)

Isn’t it purdy?  The coconut is lightly toasted and browned.  Let it cool.  If it is slightly warm when you slice it, it might not come out perfectly, but….  It really will not matter.  Sometimes I just can not wait.

As I mentioned before, Uncle Raymon’s Coconut Pie is not too sweet when made with unsweetened coconut.  But if you like a sweeter pie, go for it.  I do not think you will be disappointed either way.

Uncle Raymon's Coconut Pie

A delicious coconut custard pie that is not too sweet. It was my Uncle Raymon's recipe.

  1. Pre-heat oven to 350F.
  2. Place pie crust in 9 inch pie pan.
  3. Pour milk over coconut and let sit while you continue.
  4. Beat eggs well.
  5. Add sugar to eggs and beat well.
  6. Add vanilla extract to egg mixture and beat well.
  7. Pour melted butter over coconut.
  8. Mix coconut and egg mixture. Mix well
  9. Pour into prepared pie shell.
  10. Bake at 350F for 30 to 40 minutes.
