Meringue Cookies (AKA – Forgotten Cookies)

Sweet petite Katie from Bonham made these delicious melt-in-your-mouth cookies for Jessica’s baby shower.  Miss Charlotte asked for the recipe, and Katie was happy to share.

You might have seen this recipe called Forgotten Cookies.  That is because you put them in a hot oven, turn off the oven, and leave them.  – That is correct.  You forgetabout’em.

Katie says they are easy.  You make a meringue with egg whites, cream of tartar, sugar and vanilla.  Then stir in chocolate chips and nuts.  Drop by teaspoons onto a baking sheet.  Put in a hot oven.  Turn off the oven. And then leave the cookies to “bake” overnight.  They do sound easy.

Meringue Cookies (AKA - Forgotten Cookies)

Meringue filled with chocolate chips and pecans makes for a melt-in-your-mouth delicious cookie.

Ingredients

Instructions

  1. Preheat oven to 350 degrees F and line two baking sheets with parchment paper. Set aside.
  2. In the bowl of an electric mixer, beat egg whites until foamy.
  3. Add cream of tartar and beat until soft peaks form.
  4. Gradually add sugar - about three tablespoons at a time. Beat until stiff peaks form.
  5. Beat in vanilla extract - you can add the vanilla extract when you have added about half of the sugar.
  6. Gently fold in chocolate chips and nuts.
  7. Drop by teaspoons onto the prepared baking sheets.
  8. Place baking sheets in the preheated oven, close the door, and immediately turn off the oven.
  9. Leave the cookies in the oven for 5 - 6 hours or overnight.
  10. Enjoy!
