Corn Dip Served with Fritos

Corn Dip – I remember it well.  It was an holiday open house at an antique mall on Lovers’ Lane.  One of the dealers was serving corn dip.  Sweet Mother of Pearl.  I think we all embarrassed ourselves standing around grazing on the Fritos and Corn Dip.  I will never forget it.  She told us the recipe, (it was super easy), and we have been making it ever since.

Here is the list of ingredients:  Three cans of Mexican Corn (this was Southwestern corn and it worked well.), 1 can diced green chilies, hot and sweet jalapeño slices, green onions, mayonnaise, sour cream, and grated cheese.

Drain the corn and put it in a large bowl.  (The good news and bad news about this recipe is that it makes a LARGE bowl of dip.  This is good if you are serving a large crowd, but bad if the gathering is smaller.)  You will be eating leftover dip for a long time if you do not have a crowd to feed.  But that is not altogether a bad thing because this dip is so addictive, you will be thankful to have it in your refrigerator for snacking.

Add drained diced green chilies.

Chop up some green onion and add it to the corn.

Take the pickled jalapeños – they are the sweet and hot variety – and give them a good chop.  I like to be sure they are chopped fine so I don’t bite into a chunk of jalapeño.  Use as much or as little of the jalapeños as you like.  This was plenty for us.  It still had a kick, but it was not too hot.  Add the jalapeños to the corn mixture.

Stir in the mayonnaise and sour cream.  At this point, you might think it too much dressing, but when you add the cheese, it is not too much.

Add the grated cheese and mix well.  Cheddar is what I use.  The recipe calls for 10 ounces of grated cheese.  Grated cheese now comes in 8 ounce package.  I added some from another bag so I would have plenty of cheese. It is best to make this ahead of time so the flavors have a chance to get friendly – you understand what I mean.  Serve the dip with Fritos Scoops (I think this is important.), and everyone will be happy.  This dip was included in the Remember the Alamo gathering because Fritos is a Texas product.  This is so easy – just mix all the ingredients together.   Plus it is yummy!

    1. Drain corn and green chilies. Place in a large bowl.
    2. Add chopped onions and finely chopped pickled jalapeños.
    3. Stir in mayonnaise and sour cream.
    4. Add grated cheese. Mix well.
    5. Cover and chill at least one hour before serving.
    6. Serve with Fritos Scoops.
