The Dove’s Nest Chocolate Bourbon Pecan Pie

On our day trip to Waxahachie, Super Sister and I ate at The Dove’s Nest – an excellent restaurant located downtown Waxahachie on the square.  We succumbed and ordered the Chocolate Bourbon Pecan Pie for dessert.

Waxahachie

Sweet Mother of Pearl.  It was full of chocolate, pecans and had a subtle hint of bourbon.  Yummy!  Marsha Christmas asked if I could recreate the recipe.

As it turned out, I didn’t need to recreate the recipe because I had the Chocolate Bourbon Pecan Pie is in The Dove’s Nest Cookbook.  (Forgive me for name dropping, but many moons ago (1996 to be exact)  Rose Hunt hosted a book signing for Cindy – the cookbook author and owner of The Dove’s Nest.  By a stroke of luck, – I still pinch myself when I think about it – I got to go to the Hunt’s White Mansion on White Rock Lake for the book signing.  Now that was a home worthy of being toured.)  This is an excellent cookbook, and many of the signature recipes from The Dove’s Nest are included in this book.  You can still get it on Amazon.

It is amazing that something this simple can be sinfully decadently delicious.  It is the most popular dessert at The Dove’s Nest.

The ingredients are simple – flour, sugar, melted butter, eggs, chocolate chips, pecans, and bourbon.  You also need a single pie crust.

This side comment is for the few (maybe two) of you who think I never have disasters.  I thought I would use this deep dish pan with the straight sides.   I put the dough in the pan and tried to pre-bake the crust for 5 minutes like the recipe suggested.  Dum-de-dum-dum!  The sides shrunk down into an awful mess.

I quickly put said mess into another pie pan.

It took major effort to get the cursed crust to even look minimally like a pie crust should.  Live and learn.

Making the pie was super easy.  First the flour, sugar, melted butter and eggs were mixed well.

Then the chocolate chips, pecans, and bourbon were added.  That is it.

Put it in a prettier pie shell than mine and bake in a 350 degree oven 30-35 minutes.

My pie was not as thick as the piece of pie at The Dove’s Nest, but it tasted the same.  Thicker pies have become an “in-thing”, and the ingredients could be doubled for a thicker pie.  Did you notice?  I even tried to drizzle chocolate over my pie so it would look pretty like the one at The Dove’s Nest.  At least I tried!.

Enjoy!

Blessings to you and yours,
