Buttered Rum Banana Bread

The bananas were ripe!  You know the type- brown, soft, and squishy.  Ugh!  As the saying goes, “waste not wants not”.  Thus, ripe bananas = banana bread.

Not just any banana bread, but Buttered Rum Banana Bread. Delish!  And to think, I thunk it up myself.   I began with the Kona Banana Bread recipe from my OLD Better Homes and Gardens Cookbook, and then changed it considerably.  So many times, banana bread does not have the depth of flavor I crave.  The addition of the butter and rum (what’s not to like with those two ingredients) makes this bread beyond good.  To top it off, this recipe is easy sneezy.  Just mix it by hand, and in about 35 minutes you have goodness and mercy to follow you for the rest of the day.

Friend Melanie tells me that the dealers at Fredericksburg Trade Days ask her to make this every month.  It is something to look forward to eating.

To be honest, it could be considered a cake and would make a scrumptious dessert topped with rum flavored whipped cream, but we usually eat it for breakfast.


Buttered Rum Banana Bread

The addition of butter and rum combined with ripe bananas makes a delicious banana bread.

  1. Grease and flour or spray a 9X9 inch pan.
  2. Pre-heat oven to 350 degrees.
  3. Ingredients for banana bread. butter, eggs, sugar, ripe bananas, self-rising flour, pecans, and rum. Mix the bread by hand - easy.
  4. Cream softened butter and sugar.
  5. Add eggs and mix well.
  6. Stir in bananas until well blended.
  7. Add flour and stir until well combined.
  8. Stir in rum and pecans.
  9. Pour into greased and floured or sprayed 9X9 inch square pan.
  10. Put in a pre-heated 350 degree oven for about 30-35 minutes. I did 35 minutes. The top was golden brown, and the toothpick came out clean when I tested the cake.
  11. Your home will smell divine, and your mouth and tummy will thank you. Enjoy!
