Apple French Toast – Good Morning New Mexico

The Mrs. fixed a breakfast casserole I had never – had – seen – or tasted before.  Oh, Sweet Mother of Pearl, this is wonderful!  I like it, I love it, I want more of it!  And you will too once you’ve tasted it.  Layered in this pan are cooked apples, French bread, and a mixture of eggs, milk, and vanilla.  That is all there is.  The apples take a few minutes to peal and cook, but after that – easy breezy!

This is one of those make-it-ahead dishes.  Prepare and assemble the casserole the night before you want to serve it.  Let it rest in the refrigerator overnight.  The apples, bread, and egg mixture will become friends.  The next morning, you set it out for about thirty minutes so Apple French Toast Casserole will be closer to room temperature, and then plop it into the 375 degree oven.  And this is what you get.

Don’t you want to eat this?  Just looking at this picture makes me weak.  The dish is beautiful and extremely delicious.

Here is the pretty table.  With the Apple French Toast, we had Homestead Heritage grits (so good), fresh cherries and grapes, orange juice, and Pinon Coffee from New Mexico.  A great breakfast to remember and duplicate.

Apple French Toast

Delicious make-ahead breakfast - Apple French Toast.

Ingredients

Instructions

  1. Peal and slice apples.
  2. Melt butter in a skillet.
  3. Add apples and simmer until apples are beginning to be tender.
  4. Add brown sugar, corn syrup, and cinnamon.
  5. Cook until sugar is dissolved and apples are tender. Cool for about 5 minutes.
  6. Spray a 9X13 inch casserole dish with cooking spray.
  7. Spread apple mixture in bottom of pan.
  8. Arrange French bread slices on top of apples. Cut to fit if needed.
  9. Beat together eggs, milk, and vanilla.
  10. Pour milk mixture over bread and apples.
  11. Cover and refrigerate overnight.
  12. The next morning, take casserole out of refrigerator and let come to room temperature - about 30 minutes. Preheat oven to 375 degrees during this time.
  13. Uncover casserole and bake at 375 degrees for about 30-35 minutes.
  14. Remove from oven and cool in pan for 5 minutes.
  15. Then invert casserole onto a large platter or tray. (Be careful)
  16. Enjoy!
