Pimento Cheese Tarts

“Could you please get the recipe for the Pimento Cheese Tarts that The Queen of Everything made for Jessica’s baby shower?”

Several of you asked, and it is with joy and thanksgiving that I am able to share this recipe with you.  These little tarts are beyond delicious.  The jalapeño pimento cheese has a little kick to make them extra tasty.  No matter how many of these pimento cheese tarts The Queen of Everything makes to serve at a gathering, they are always all gone.  Number of Pimento Cheese Tarts left on the tray – That would be nada!

The added bonus is that these pimento cheese tarts are Super Easy.

Pre-heat the oven to 375F.  Easy!

You will need two boxes of mini fillo shells.  There are 15 shells in a box and they are made by Athens.  You can find them in the frozen food section at the grocery store.  Easy!

Next you need 1 1/2 cups (12 ounces) of good quality pimento cheese. Easy!

(Any favorite pimento cheese will work, but the lady that gave The Queen of Everything the recipe used Pam’s Pimento Cheese that is in the deli section at Central Market.  The Queen of Everything uses Pawley’s Island Palmetto Jalapeño Pimento Cheese that is in the dairy section at Central Market.  The Jalapeño Pimento Cheese gives the tarts a little kick and makes them extra yummy.)

Finally, take one egg white and beat it until it is stiff.  Easy!

Fold the beaten egg white into the pimento cheese.  Easy!

Place the frozen mini fillo shells on a cookie sheet.  Easy!

Spoon the pimento cheese and egg mixture into the shells.  Easy!

The Queen of Everything doubled the recipe for the party.  She also  suggested, “Be careful not to over-fill the shells”.  Sounds like the voice of experience if you ask me.

Place filled shells in the pre-heated 375F oven and cook until they are just beginning to brown – about 10 – 12 minutes.  Easy!

Do watch them carefully because they can easily get too brown. (Translated – They can easily burn.)

Do not rush and pop one of these delicious tidbits into your mouth the second they come out of the oven.  Very Hard!

They are H-O-T, and they will burn your mouth (Voice of experience.)

Serve them to your guest.  Easy!

Pimento Cheese Tarts

Pimento Cheese baked in fillo shells make an easy delicious appetizer.

  1. Pre-heat oven to 375F
  2. Fold stiffly beaten egg white into the pimento cheese.
  3. Fill fill mini shells with pimento cheese mixture. Be careful not to over-fill the tarts.
  4. Bake the filled shells for about 10 - 12 minutes in the pre-heated oven. Watch closely. The tarts should be lightly brown.
