Rumpledethumps

Rumpledethumps – what a name!  I love saying it – Rumpledethumps, Rumpledethumps, Rumpledethumps.  Isn’t that fun.  What you need to know is that this is a British mashed potato, cabbage dish that is topped with cheese.  I’m here to tell you it is yummy in the tummy!  Becky brought this dish to the Big Jubilee Supper, and it was so good and different I just had to share it with you.

Let me tell you about dear sweet Becky.  She is beyond precious.   In our group, I would call her and her family resident missionaries.  They have a love for missions and have taken numerous mission trips with our church.  In Latvia, David  (her husband) has been instrumental in building playgrounds for churches.  If I have the story correct, the churches in Latvia so appreciated the playgrounds that were built for them.  The playgrounds were a big hit with the children and parents in Latvia, and many came to the church as a result of this ministry.  With this in mind, the Latvian churches wanted to participate in a mission trip to Russia and build a playground for a church there.  The playground equipment was sent from Texas, and then transported to Russia.  The Latvians received the joy of successfully building a playground for the Russian church, and the Russian church has a vehicle for ministering to their community.   I cannot begin to tell you all the mission work Becky and David have done, but it pleases me to know how deeply they love our Lord and love to share the gospel.

Becky told me she loves to go to the library to check out cookbooks from other countries.   They have had “yummy meals from all over the world”.  Isn’t that a cool thing to do?

Later this summer, her son is going on a mission trip to England.  In order to try out some British “stuff”, Becky checked out a British cookbook and found this recipe for Rumpledethumps.   Becky and her family like mashed potatoes, cabbage, and cheese, so the recipe was appealing to her.  Wow!  What a hearty delicious dish to bring to the Queen.

Rumpledethumps

  • Yield: 9X13 casserole

A delicious British recipe of potatoes, cabbage, and cheese.

Ingredients

Instructions

  1. Butter a 9"X13" baking dish.
  2. Boil potatoes until done.
  3. In a skillet cook bacon until done.
  4. Add cabbage and leaks to bacon and saute until done.
  5. Drain and mash the potatoes. Add butter, milk, salt and pepper.
  6. Combine the cabbage and leaks mixture with the potatoes.
  7. Pour mixture into a buttered 9X13 casserole dish.
  8. Top with Cheddar cheese.
  9. Broil until bubbly and brown.
  10. Enjoy!
